Figgy Jam

 

I’ve recently rediscovered my passion for cooking & trying new recipes out at home. I’m also trying to make a conscious decision to eat more clean. In my effort to do so, I’ve stumbled upon the Against All Grain cookbook & blog! It is FULL of simple and delicious recipes without grain (obviously), dairy, and processed foods. And while it may take more time to prepare, there is nothing more satisfying to me than eating something I have prepared and knowing exactly what I am putting in my body!

I am a HUGE fan of anything Fig! Put them on pizzas, salads, snacks, desserts & I’m all for it. Most varieties are sweet and pair nicely with more sharp flavors (i.e. prosciutto). Since fresh Figs wait for no one, I thought I would quickly use them in a jam. My first ever go at making jam… The result was a sweet & healthy jam that took less than a hour to make! Best part: no fancy kitchen equipment required.

Kitchen Essentials Needed:

Blender

Medium sized sauce pan

Airtight container (I used an old jam jar that I rinsed out & saved)

Taste Elements

1 lb Figs; stems removed

2 tblsp fresh Lemon juice

2 tsp Lemon zest

1/3 Cup Honey

Instructions:

Place the figs, lemon juice, and lemon zest in the blender. Pulse until smooth. Transfer the contents to the medium sauce pan. Add the honey to the mixture. Bring up to boil over medium high heat. Once liquid is boiling, reduce heat and let simmer for 20 minutes (I stirred occasionally). Remove from heat and allow the mixture to come to room temperature for 30 minutes. Place into airtight container & enjoy!
