Craving an egg or chicken salad sandwich? But don’t have the time? This Creamy Avocado Salad Sandwich is the perfect substitute. Prepared with just a bit of mayo, you still get the subtle tang without the calorie bomb.
The recipe for my Creamy Avocado Salad Sandwich was born by way of craving. I wanted an egg salad sandwich. I can’t have eggs and was short on time (we were headed to the zoo). What’s a girl to do?
“Aha!” moment. AVOCADOS.
But I didn’t want just guacamole on two pieces of bread. As lovely as that sounds, I wanted a bit of texture while still being creamy, so I added a can of garbanzo beans. The result was creamy, textured, lovely, and balanced. All while only taking 10 minutes and getting to the zoo on time.
The hint of citrus from the lime helped bring life to the inherently bland taste of both avocados and chickpeas. Peppery arugula and cilantro add complexity where needed, and the crunch of the cucumber is pays homage to celery in traditional egg and chicken salads. If you are trying to stay away from mayo, simply substitute it with greek yogurt.

Creamy Avocado Salad Sandwich
My Creamy Avocado Salad Sandwich is great for on-the-go peeps who want a healthy option for lunch or dinner. No cooking required & amazing as a veggie dip, too.
- 1 15oz can Garbanzo Beans Rinsed and drained
- 1 Large Ripe Avocado
- 1/2 Medium Red Onion Chopped
- 1 Jalapeno Seeded and diced
- 1/4 - 1/2 Tbsp Mayonnaise
- Zest 1 Lime
- 2 Tbsp Lime Juice ~1 whole Lime
- 1/4 Cup Fresh Cilantro Chopped
- 1 Tomato Sliced
- 1 Small Cucumber Sliced
- Arugula for topping
- Pinch Salt/Pepper to taste
- Bread of your choice We love Dave's Killer Bread
Mix and smash garbanzo beans and avocado together in mixing bowl.
Add onion, jalapeno, mayonnaise, lime zest, lime juice, cilantro, salt and pepper. Stir and adjust seasonings as necessary.
Spread mixture on to bread of your choice. Layer tomato, lettuce, and cucumber.
Slice and off you go!
A little side note: Recipes seem to develop out of thin air when you have staple ingredients on hand and readily available. We always keep cans of beans stocked as they can be thrown into anything or smashed into something. Case in point: this creamy avocado salad sandwich. We love to keep fresh veggies prepped and ready to go to use in quick salads, thrown onto a roasting pan or to snack on throughout the day.
